    Default Dried wild mushrooms

    Well, I bet I have 10 quart jars of dried mushrooms - anything really good to make I haven't thought of?
    Tonight is white pizza with golden chantrelles!

    Like, good cream of mushroom soup, or maybe an oriental soup?

    Whatchu got?

    PS, I have Lobsters, Boletus, Chantrelles, and Caesars.....

    Wild About Mushrooms - one of my very favorite cookbooks. i'll see if i can find you a hard copy, they pop up pretty often at the used bookstores here.

    Mushroom Pate. Bonus, it will freeze nicely if you wrap it tight. I'll pasted an Emril recipe that will work. Leave out the truffle oil and use a heavy non-reactive sauce pan natch.

    Risotto, mushroom gravy over mashed potatoes, beef stew with mushrooms, puree of mushrooms on a pizza with asparagus, garlic, herbs, gorgonzola and fontina. etc..

    For a nice risotto lesson, try this:

    Personally, I'm just as happy with orzo pasta. Cheaper and more consistent, IMO.

    If you need to use a lot of them up, try Hungarian Mushroom soup. The recipes vary quite a bit, but when done well, it's my favorite soup ever.
