    I don't now if I'll make a regular plain loaf again. The everything bagel seasoned recipe is zero extra effort and is so good.

    Loaf on the left was a cold bake, one on the right was a hot bake. A bit better oven spring with the hot bake.

    900g of AP flour.
    600g of water.
    200g of starter.
    100g of everything bagel seasoning.

    My kids won’t eat wheat bread with any kind of seeds in it nor will they eat anything but plain bagels, but they go through jars of everything bagel seasoning like water. With toast and cream cheese. Go figure.

    We had a bread project (a guy in his kitchen whose neighbor owned our local general store) that produced a wheat berry whole wheat bread. I don't know how he kept the wheat berries from drying out in the baking process, but the bread was great. One of those names that really does accurately describe the form of the thing, because good ones are both wheat-like and berry-like. And these were good and they made a great bread as an addition to a good whole wheat loaf. Unfortunately he's moved on to other things so no more bread. Not that we lack for high quality bread bakers. There are probably 5 top notch bakers in the area, maybe more. Local bread is really the best bread.

    This is GOOD, and I'm not a pumpkin guy.

    AP flour - 900g
    Water - 350g
    Starter - 200g
    Salt - 20g
    Pumpkin purée - 300g
    Cinnamon - 1 TBS
    Turneric - 1.5 tsp
    Nutmeg - 1 tsp

    This is fire. The jalapeno comes through with a little heat, it's nice.

    When in Quebec, it is time for baguettes...

    When putting in the 25 grams of the honey which I had bought at the apiary down the street, an extra big dollop of unknown size fell into the bowl. Herding honey is not easy. So the extra brown crust is (I hope) due to the excess honey rather than that I burned it.



    And here is a rip (because it's a baguette) shot...the pieces don't line up due to a glorious tasting. Note to self, always add extra honey.

    My favorite part of the process…lifting the lid prior to the last 20 minutes of the bake to see what the oven spring produced.
