    Default OT: Let's talk waffles

    I'm looking to get a waffle iron - for weekend pre-ride hearty food. Any suggestions? Keep it simple?

    Also, any recipe help on batter than can be premade and kept in the refrig for a few days? I'd prefer to save some time and have the stuff ready to pour. Whole grain and/or fruit laced would be appreciated.

    There will be no talk of Log Cabin, Mrs. Butterworth or any of her brood here. We are a Maple only household.

    I have a belguim style iron that i think was from william sonoma but its older and was a gift
    the batter makes the difference anyway, here my recipe ( I eyeball everything so no hard numbers)
    these are dense and filling and great with peanut butter before riding but not light or fluffy

    1 part quick oats
    2 parts whole wheat pastry flour (you can use normal but this makes lighter waffles)
    cinnamon
    nutmeg
    baking soda, use enough but not too much
    egg
    unsweetened applesauce, use enough to fully wet out the batter then a little more
    milk to consistency

    these are awesome for preride or pre race when i have time to make them

    Go for a real, round Belgian waffle iron. No square or skinny waffles need apply.

    This is making me hungry.

    My wife makes them for me ... I think she uses whole wheat pancake mix as the base and not sure what else. Top with bananas or other fruit. Good with Nutella or MAPLE syrup.

    IMO the best waffles are thick with a crunchy exterior and a light, airy middle.

    However, there's something to be said for the standard old skinny square waffle from a standard four-to-an-iron waffle iron. They stack and fit nicely in freezer boxes, hold up well to freezing, and they only take a few minutes to heat in a toaster. Doesn't get much more convenient than that. And a good maple syrup will make up for a lot of waffle sins.

    In terms of recipes, my brother swears by this one for a whole grain waffle, and I'm pretty sure he's tried a lot.

    Now we're talkin'!!

    IMHO...If you purchase a non-stick iron, spray it anyway with pan release, and we're golden.
    I use good ol' Aunt Jammey...The key is to make it the night before, and let it sit overnight,
    in the 'fridge. Then use a french whip to re-mix the batter together in the AM...Voila'!

    Make your mix a little loose, it will stiffen up overnight, or adjust in the AM.

    this i know about. I've got 6 or so waffle irons, and bought and returned 4 or 5 more in the past couple years. Williams Sonoma used to sell what i think is the best iron that i've come across so far, Villaware. I've got 3 or 4 still and feel they are consistently the best. WS, at least here in vegas, doesn't carry them anymore and stocks All Clads product. I've returned all of those. Very uneven color, very slow (they tell me they've fixed their problem. no knowledge of this) Good irons give good color and are fast. Give the Villaware a try.
    Key to a good waffle, while there are many good variations, I always like them with whipped egg whites, folded in gently. Gives that light, airy, hint of a crunch to the waffle.

    we have a krupps iron. seems to work well.

    and with maple syrup and blueberries... or any other good berry...

    I have an old Vitantonio that works great--and has for years. I think that it is made the same company that no produces the Villaware brand that WS sells.

    bking is right -- whip the egg whites separately (or with a bit of white sugar mixed in), and fold into the rest of the mixture. I think it gives a much crispier result.

    A recent Cooks Illustrated had a recipe with a secret ingredient - seltzer or club soda is often used in place of still water. Supposedly gave the waffle the lighter texture of whipped egg whites without the whisk work. Haven't tried it yet, but will soon.
