    Default A Little Dinner Party

    My old boss still calls me to do some catering gigs now and then. This one was in Boston.
    The client has a beautiful home, and the crowd wasn't too shabby, nuff said...short skirts,
    pro football players.

    I grabbed these pics after I set up the the cold buffet table. The menu was a mix of hot and cold...
    Buckwheat noodles thai, raw bar, sliced tenderloin, butter poached lobster rolls, and on and on.
    The table was my work...

    What kind of cheese is the one in the middle?

    The one that looks kinda like a cheese inside a cheese.

    Not sure whats going on with that cheese log. It's a little scarey.

    Good liquor too. Bombay Sapphire makes a killer martini.

    that's a nice bottle. A client gave me a case of Coppola Blanc De Blancs. Give it a shot if you have the inclination.

    Oh man, that must have been some party.
    I sure hope there was some classed growth Bordeaux or something from the Rhone to wash down that Chèvre.

    Humboldt fog? I'll try.

    First, I really like it because it is nearly as good as some of the best goat cheeses I've had in rural France and when my sister is visiting from Paris this makes her happy so there is that.

    The cheese is really three layers consisting of a slightly chewy rind than the pay off, a gooey runny middle layer that has an earthy after taste and last is the center. The center crumbles and is much milder than the middle runny layer. That dark streak apprently is a layer of ash which is pretty tasteless but it is part of this signature cheese from the maker. Sort of like the seat stays on a DK bike, they don't make sense but as a whole you have to love it.
