Whole wheat waffle with honey roasted peanut butter and drizzzled with a little maple syrup. With veggie links and or fruit.

Attempt at Belgian waffle dough was kind of a fail. Doesn't seem to have slow-risen overnight in the fridge.
Ended up cutting the dough with milk and baking powder to get it lighter, but I wreaked a bit of havoc on the flavor.
That said, my vacuum salesman roommate LOVES dense food...so these were right up his alley.

I like to do Bob's Red Mill steel cut oats, but a slightly modified version to make them last a bit longer through the day. When I'm waiting for the water to come to a boil, I dice up a slice of ham or turkey lunch meat and a cube a thin slice of sharp cheddar. When the water gets to a boil, I dump in the oats along with the ham or turkey. At this time I also crack an egg into the mix and stir it all around. After 10-15 minutes with the occasional stir, I empty the mixture into a bowl, and dump the cheese in. A bit of pepper on top and then it all gets stirred up. Savory, tasty, pretty easy to make, and it lasts a nice long time without giving me the gut bomb that so many protein heavy meals do.

Easter brek for il familia...was going to do a nice strata but found myself short on time/energy last night, so I cobbled together some lemon bourbon french toast and a yam/zuke hash. Not pictured: Really crappy fried eggs.

I feel guilty for not acknowledging your presence for the past two years, much as I've loved you before. My cured pork spark has been reignited.
In waffles. With scallions. Garnished with poached eggs from across the street, more pancetta, a basic tomato sauce, and a bit of cilantro. Pre-ride heaven.
