I finally gave in to the Instant Pot wave as a way to do fast protein other than grill for weeknights. First couple of attempts were ok but nothing special. Tonite I hit it more solidly.
Chicken and Sausage Gumbo.
Skinless boneless chicken thighs, cut each in half
4 Andouille sausages, sliced
1 package of frozen okra
Home gown red peppers and onions
1 cup of water and two teaspoons of cornstarch (not very keto but it is what I had for thickeners...) stirred smooth
A shot of gravy master for color.
2 heaping teaspoons of Chile Garlic paste
Liberal squirts of Worcester sauce
Thyme, salt and pepper
25 minutes cutting, throw it all in the inner pot, stir, 30 minutes under pressure (walk away, it's happy on its own)
New record for taste/prep time ratio...
