    Big snowfall last night and our “baby” turned 18 today. He requested Chicken Parmesan and of course Mrs. RW honored his request. At least snow serves some purpose beyond replenishing the groundwater supply.

    Sort of a poor man's stew which aptly fits my description. Pretty simple really, but you need a few hours to let it cook...meat, vegetables, beef broth, bacon, tomato paste and garlic all cooked together in a red wine reduction. I imagine that this would be a good instapot recipe candidate. Fwiw, the mushrooms were sautéed and added at the end so that they didn't turn to rubber in the wine reduction.

    Mrs. RW's version of a King Cake (in cupcake form) for Mardis Gras...a little creepy if you ask me, as it brings back childhood memories of baby dolls being strung from garbage truck radiators.

    It was too cold to slow cook the brisket outside, so it was lightly browned in a dutch oven, slow cooked in the oven in a red wine reduction with onions, carrots, celery and the usual suspects, then served with pasta and grilled broccoli.

    Sure!

    Ingredients:
    Reinette apples (or non-sweet apples)
    Frozen puff pastry dough (2 sheets)
    Cinnamon
    Sugar
    Raisins
    Walnuts
    Butter
    1 beaten egg

    Preparation

    Defrost puff pastry dough at room temperature. Meanwhile, peel and chop the apples.
    Put butter in the frying pan and, once melted, add the raisins and then the apples. Cook until pulp is made into compote-like pulp. If the apples are dry, add some water. Towards the end, add nuts and sugar mixed with cinnamon.

    Preheat oven to 200°C. (390ºF)

    Place one sheet of puff pastry on baking paper and pin it so that it does not overgrow. Roll the other sheet until it is very thin.

    Spread the cooked apple over the first layer of puff pastry and cover everything with the stretched out sheet. Paint with egg and sprinkle sugar mixed with cinnamon over the egg.
    Bake for 25-30 minutes

    The original recipe uses bread crumbs fried in butter and paints the strudel with melted butter.

    Then sliced. I had a very nice photo presentation, then my daughter pulled the center slice! Still, it tasted good all the same.

    I intended to mention, of the two briskets, close to same size, one took a bit more than two hours longer to cook. Brisket marches by it's own drum, and time and temperatures vary wildly. When it's done, it'll let you know.
