I’m surprised no one has mentioned the Sony RX100. There’s several versions available for sale with the sweet spot between price and features probably being the IV or V model. The image quality of all the Sony cameras is off the charts but the menus aren’t very intuitive. I’ve been shooting Sony mirrorless professionally for years and can attest to the image quality of all of their cameras.

This is a very old thread. 2011. The first RX100 came out in 2012. Once it came out, that camera pretty much became the default recommendation for a cycling camera. There are other threads on cameras on this site. This one is probably the most comprehensive:
