    Default Pancakes

    I’ve been cooking pancakes for a minute now and seem to have fallen in a rut. Same ol’ flapjacks. Made the same ol’way.
    This past weekend I was listening to a Jack Johnson playlist and heard ‘Banana Pancakes’.
    On my counter sat a well ripe banana. Chopped it up and threw in some pecans.
    It was like banana nut bread with syrup. Divine!

    I am a big fan of the Arrowhead Mills Buckwheat Pancake mix supplemented with lots of frozen wild blueberries. Fast and delicious...

    Make mine buttermilk and blueberries, please, from the Betty Crocker Cookbook. Nice to see other folks appreciate the simplicity and goodness of “rolling your own” pancakes.

    As it says...just a touch of Vanilla makes it magic. Oddly, I don't like vanilla things. But for some reason adding it somehow improves any pancake or crepe recipe to my taste buds.

    I also always add a quick tip of the syrup bottle into the batter. Not much. Maybe a tablespoon. Deb doesn’t know.

    King Arthur Flour Gluten Free Pancake Mix. Because we usually have pancakes when a friend visits who is gluten averse. And then we just decided we liked the mix. Something different about it from the regular King Arthur Flour Pancake Mix. Can't quite put my finger on it though.

    Speaking of sneaking things into the batter - I've been playing around with adding a little yogurt to the mix. I find it gives it a nice creamy texture.

    Basic, but we make kodiak cakes protein pancake mix for non-special occasions. No sugar crash with these bad boys! Also, honey only in this household. Never looked back. I zest a lemon or orange into the batter and add blueberries.

    Special occasions: one recipe or another + ricotta cheese. Won't disappoint.

    I'll do a little bourbon or rum... same diff but w/o the vanilla if you prefer.

    I've recently been playing with replacing some of the flour with Masa Harina. Most such recipes recommend 50/50, but for now I've settled on 75% masa. The nixtamalized corn is much easier on my sensitive digestive system. Definitely a heartier pancake without being a gut bomb (buckwheat, which I love). Blueberries all the way, the fresher the better, and on occasion buttermilk. Always cooked in bacon grease.

    A friend from Vermont gave me a bottle of his family's maple syrup, that was an eye opener. I've not been able to find anything close locally, real bummer.
