Improv in a vaguely korean style...
In the Instant Pot
Saute High setting
Olive oil
Country style pork, browned on all sides in batches, remove.
Sweet Red Pepper sliced coarsely, add to pot stir occasionally till they start to soften
Large white onion sliced coarsely, add to peppers, continue stirring.
Return the pork to the pot stir well
1/2 jar of kimchi (i used Moma O's Super spicy)
1 cup chicken stock, stir
Turn to manual for 35 minutes. Release pressure. Serve. Rice traditional but optional... Garnish with fresh chopped cilantro.
