Easter dinner is the traditional pot roast done with sun dried tomatoes, pepperoncini and cabbage. Followed up by a coconut custard tart with roasted pineapple. Very traditional.

Well, it's Mother's Day this weekend, so I will be manning the kitchen both days.
Not sure in which order, but the lady of honor has requested steak au poivre and lobster rolls.
My only humble request was no smoker or pizza oven since it's meant to rain from early this morning straight through to Sunday night.

Some Tomahawk Chops reverse seared on the Weber charcoal grills, accompanied by corn on the cob; Brussel sprouts halved, tossed in olive oil with garlic and pepper in the oven due to lack of Weber room; and mushrooms and onions sautéed in butter finished with some Johnnie Walker.
As they were carried in from outside...
The whole family got into it...

My fam flew to Ireland ahead of me and my wife hates jerk chicken, Brussels sprouts, and reggae music. So tonight was drumsticks prepared said way in the air fryer combo oven, charred shaved sprouts, and the newly released deluxe version of Exodus (loud!) on the hifi.

Corn pie. Crust is flour, melted butter, Crisco and a quarter cup water. Prebake it. Put two and a half cups corn kernels, half a cup sugar, a cup of milk, four eggs and some corn starch in a blender and puree it. Shove that through a fine mesh sieve squishing out every last bit of liquid. Add a little vanilla and lemon juice. Cook it in 325 oven until it doesn't jiggle much. You guys that get Milk Street have the details.
It is quite edible.
We had some friends over for a BBQ and we kept it simple with Hoisin marinated chicken, potatoes with pancetta and asparagus. Too dark to photograph the peach cobbler that Mrs. RW put together…with a vanilla ice cream too.

Yes, as they say in the credits…no animals were harmed in the making of this movie. Oddly, she only chews the meat off and then puts the bone down. Unlike any other dog I have seen, when you take the bone away she is fine with that. She also doesn’t eat her food out of the bowl all at once…just sort of grazes over the day like a cat.
And yes, it was good. The trick on the “flex” of it is I think to pre-make the sides like mushrooms and onions so that they can just stay warm while you make sure the chops come off the grill when they are done right.
