    Wade - it's not a sushi book per se, but Everyday Harumi by Harumi Kurihara is a great intro to Japanese cooking. In it she covers the proper way to cook rice, how to make miso soup (and dashi stock) from scratch, and covers a lot of other basics. She's a great writer too. Check it out.
