Thread: Homemade Race / Ride Food

    this worked great

    1 cup sushi rice
    3 eggs
    8 slices lowfat turkey bacon
    2 cups chopped spinach
    ~1 cup chopped carrots
    2 tbsb basil pesto
    1/4 cup parmeggiano-reggiano

    cut it into 6 bars

    brought bars to school to eat as quick lunch and snacks over a few days.

    tried them with 1/2 cup tomato-based pasta sauce...still a bit too moist, but the flavor was good. sun-dried tomato would be perfect, but I'm allergic, so....

    Made em' :) For the life of me could not find proper sushi rice so I used risotto rice which is pretty much the same. Good enough for gov't work yo.
    It's cooling right now. Taste is excellent and it compacts nice. I went with Lim's direction. He uses less water to make the rice than usual...end result is real tight rice. Anywho. Queen just snapped up a couple squares and declares this a winner.

    doofus luau madness rice cakes

    wife says a winner

    1 cup sushi rice
    3 eggs
    4 oz sliced ham, chopped
    1/2 cup chopped fresh pineapple
    1 fuji apple, chopped
    1/2 cup mozzarella
    1/3 cup grated carrots
    1 tbsb honey

    bake at 350 for 10 minutes after mixing (helps get the extra moisture out from the pineapple)

    a little fatty for races, great for lunches/snacks on the go

    I got too many ideas for these things

    a light satay...pesto...dried fruit+nuts...mozzarela+tomato+basil+light balsamic...

    the rice is your canvas...how many cool flavor ideas can we come up with that will work as bike food?

    came up with these today:

    doof's energy biscuits

    1 cup oat flour
    1 tsp baking powder
    2 tbsp brown rice syrup
    1 small mashed banana
    2 tbsb almond butter
    1/4 cup chocolate chips
    1/2 cup nonfat yogurt

    mix dry ingredients

    mash banana well, then add the wet ingredients one at a time, blending well

    add the wet to the dry ingredients

    kneed dough gently for 2-3 minutes

    press out, cut into 4 bars of equal size

    bake on pre-heated baking stone, 20 minutes at 350

    might be a bit to bready for rides (I'll try a version with 2/3 cup oat flour, 1/3 cup whole oats) -- and just a bit too dry for race food. more yogurt and banana is the answer....

    each biscuit (approximate):

    250 calories
    6 grams fat
    10 grams protein
    50 grams carbohydrate

    mrs. doof says they're a hit with a cup of tea

    Woah momma Doof is eats your race chow? MUST be good.

    Hey, I froze a batch of the Francois and they thaw out in my pocket perfectly. Folks we have a winner.

    I'm going to use this recipe for my RAAM coaching clients here forward with some of my other fav. ultra chow. Try this recipe, it is a winner.

    did the doof biscuits with 2 more tbsb brown rice syrup, a full cup of yogurt, 1 more banana. got a more brownie-like batter, baked up into a moist bar. they keep for 1-2 days, then start to get a bit gummy. edible though.

    Made your 2.0 version last night.
    I had to put it in a pie pan- it was too moist to form into bars- maybe I used too much brown rice syrup?
    Seemed overly moist when done- but the next day after cooling I had some pretty solid wedges. Tasted pretty good- not really sweet at all.
    Not sure about riding but they were pretty good for snacks!

    you pour the mixture into a non-stick brownie pan

    cut them into bars after they cool

    I used them for snack and rides this week -- they worked by my twisted standards

    Default Banana bars

    I made another batch with a little less brown rice syrup- used the pie pan again. Made a nice and solid mass. I cut into wedges and wrapped them in saran wrap. They are dense but solid.
