Not like it’s rocket science. I’m thinking an iron skillet would be preferable, as it would be easier to flip.
Rolling the pita out pretty thin help a bunch. We do them on a medium+ hot iron comal style skillet. Flat skillet with no sides. Heat one side until you see the bubbles come up, look for good browning, flip and finish.

You have a way of raising the bar on most things, mostly bread, food and bike pics! I have been off my bike and baking. Need to do more of both.

no pics sorry, but when in Austria every Friday a local lady delivers some loaves of full corn bread to the Lagerhaus, a practical place where the local chaps get their nuts and bolts and so on. It is a strange but excellent place in many ways. I try to get down early, as it sells out fast, and so the bread, a bit of butter, some honey and coffee can get us going in the mornings. And of course the local honey will immunise you from pollen when that season returns in the spring.

I've been trying to improve my basic sourdough game as results have been kind of meh lately. I ran my starter through a daily feeding regimen, but still wasn't happy with my results. So I "converted" my all-purpose flour starter to a diet of bread flour over the course of a week of so. Cowabunga expansion, so now I tried baking with the bread flour-based starter but keeping my all-purpose flour mix. The other change I made was pre-heating the dutch oven. it was a little tricky to maneuver the dough on parchment paper into the hot pot, but off we went.
First impression is that the oven spring is higher and overall the crumb is more even. The bread seems a bit chewier but that's hard to really confirm. I'll keep at it with this new process and see how consistent I can get.

PS...obligatory slice pics. The ladies had a few pieces toasted with avocado spread, to accompany their pumpkin/white bean soup. I’ll work on the soup pics, as I’m sure that I’ll be enjoying the soup for dinner sometime over the next few days.
