I am going to jump the fence but stick with me for a second. Day/Date, Automatic chronograph(7750). One glance at this and you may forget the pilot theme that you thought you wanted.

If a pilot watch is needed, I would look at Steinhart because prices are very reasonable for the quality or Sinn. Ordering a Sinn takes a leap of faith unless you know someone who has one. I don't think there are any retailers around. Try to tell me that Sinn isn't sexy.

The look good, but I have a hard time getting behind a company that makes rip offs of other watches. To me, most of them* are the equivalent of buying a ferrari kit car.

Exemption for MkII, since everything he is doing are basically unobtainable former tool watches.
IWC... screwing everything up after the 3706 and 3251. Really, the Vintage Ingenieur is fine, but the rest of them have completely lost the plot. Some days, I really miss my 3251 though. At least it went to a good home!
It's closer to you than me right now. Getting serviced in NYC, but should be back in the next week or so.
I'm with you on IWC for the most part. I really like that 3717 I posted above, but the newest stuff does little for me. It's all gotten too big and confusing looking.
Were the 3706 and 3251 in-house movements? The 3536 is rather desirable, but the ETA movement loses some of the mystique. I'm note sure if the draw is the name on the dial or what.
To me, they were supremely legible watches with useful complications and a direct aeronautical lineage. I used my 3251 when I managed a global team and traveled a lot. Having a watch that displayed home time was useful, and I found the IWC implementation superior to the other GMT views. Current pricing has gotten silly.
Easy now. There are so few original designs floating around. Almost every diver is a sub clone. The pilot watches are a generic design. Tough to bust anyone for plagiarism in the world of timepieces. The only watches that don't have homages are those that are too ugly to copy(see Hublot).
We were in Geneva last week. I'm ruined.

Possibly a 3231
Scrapped the Milgauss after trying one on...and, I just read about the Omega Aqua Terra >15,000 Gauss. That thing does it for me, simply because of the advance in technology, and the date window. What a badass little piece.
