A few days ago I roasted a turkey. What ensued is another story and several dinners and sammies.....
First a couple rounds of Rosemary Fitzgeralds (Fresh Rosemary simple syrup, Gin, Lemon)
Next salade' with bits of turkey heavily browned in Ghee and cute itty bitty tomatoes and lemon tahini dressing.
Last a mistake that turned into something pretty wonderful. Made turkey soup and accidentally dumped 3X too much Quinoa in. It's really good. Go figure?
*Yes we do have a running Jenga contest in process until forever.....

My homegrown lemon crop has been put to its final purpose.
Working on some pork steamed dumplings this afternoon. So far, so good. I ran out of shitake mushrooms which are a major part of the filling, but it was still fantastic.

Righteous little dumplings. LOL I learned how to made them at one of my sister's weddings. One of her dear friends was a new immigrant from Mainland China. She ran the show and beat me into submission folding hundreds and hundreds. At some point she deemed my crinkles adequate and upped the ante' teaching me how to do it one handed....gah! Always something to learn.

I am fascinated by people that can do hundreds of dumplings an hour. When I was in Japan, I watched a cook going through 1 every 3-5 seconds.
I'd really like to learn more about dim sum and dumplings. I will be doing a lot of testing next week on dough and fillings. I really should get a website started soon.
Years ago at one of my favorite Sichuan places if you missed the lunch rush, you were treated to a display of dumpling making wizardry as the owner and several of the waitresses took over a large round table in the corner and turned out the most amazingly intricately folded dumplings at a blistering pace... Probably doesn't pass the health codes today... Wimps...

Another round of tempeh in moulds and ready for inoculation.
I am doing a soy bean and black bean tempeh tonight.
If you would like to know how to do it and where to get the starter, please let me know. It is on of the easiest processes to do and after 48hrs, you have fresh, homemade tempeh.
Absolutely yes please. Fresh Tempeh done right is one of my favorite things. Don't hold back.

Before the quarantine I bought a spiral cut ham for Easter dinner with wife, kids and grandkids. Needless to say, that didn’t work out. Sliced up the ham and put most in the freezer and now I have this great looking bone with scraps of meat hanging off. My thoughts are a great big pot of bean soup so I’m looking for favorite recipes.

We did a spiral ham for Easter as well, though with 6 people in the house (and a dog) we managed to make a dent in the meat. Still plenty of leftovers.
I made a stock with the bone Sunday night, and wife used it to make a ham and pea risotto last night (more leftovers there...), and now need to decide whether to make soup with the rest or freeze it.
