    A horrible picture but a small (5 lb) standing rib roast that I made. With gravy, Yorkshire pudding, mashed potatoes made with oat milk, some kind of veggie medley made by my wife. And to think she was a vegetarian when we started dating. And the dog chomped on one of the bones for 45 minutes out on the sidewalk...because that's how it has to be done in a small NY apartment.



    And Kelchner's Horse Radish from Allentown, Pa is the greatest stuff on rare roast beef.

    Easy breakfast this weekend. Egg in a hole. Bread, butter, egg, done. Drizzle with honey after it comes off the griddle to really take it up a notch.

    Horseradish-panko Chinook Salmon. 2nd attempt. The trick is fresh horseradish. The bottle stuff is crap. Came out really good if I say so myself -Mike G

    I typically make this with Arctic char but the fish monger didn't quite have one even close to the right size, so I bought a rainbw trout. Usually find trout tastes way too mild but addding sauteed fennell and onions, garlic pepper flakes and blood orange really woke it up. Actually enjoyed it -Mike G

    Didn't get a pic, but made the best burgers I've ever made Saturday. At-home burgers are typically treated as quick and fast and easy meals, nothing special, just wham-bam-done. Saturday I took my time and made something really good. Not ground breaking, just basic stuff, but gah, it hit the spot.

    Cooked some bacon in a skillet. Drained off most of the grease, then sautéed some Vidalia onion in the same skillet w/a little of the bacon grease. Grassfed ground beef, seasoned with Weber's 'Gourmet Burger' seasoning, then cooked smashburger style on the griddle. While still on the griddle, put the onions on the patties and the cheese on top of the onions and let it melt down. Built the burger with butter lettuce on the bottom, some pickles and a tomato slice, patty w/onions and cheese, bacon on the very top, and some mustard. Delicious.

    Grilled cheese with my Jalapeno Cheddar Bread, Gouda, and white cheddar. Needed a bowl of Tomato soup, need to plan ahead next time, sure was tasty.

    Smoked some chicken wings - just rubbed with a few spices and then sauced them after 90 minutes. First chance to use our new 8' picnic table - although all the kids took their food back inside so it was a little excessive for just the 2 of us. Hopefully we'll be able to have some family round in the next few months.

    Found recipe for Sardine fishcakes. Came out well even if it was hard to keep them from breaking in the pan. Not sure if it was because of the yukon mixed with a russet or not chillig the patty. Recipe did not call for an egg. Tasted pretty good-Mike G

    Did spare ribs yesterday and pizza on Saturday.
    Ricotta, Red Clay spicy honey, and pappadews put this one over the top.
    Sauce was just San Marzanos with olive oil/

    Smoked some beef ribs and a pork belly (felt a waste to just have 2 little racks of ribs for a bucket of charcoal) yesterday - pretty good for a first attempt.

    I failed in the picture taking department, but baked and cooked quite a lot.

    Crepes with Nutella and berries
    sun dried tomato and basil loaf
    Three varieties of Meringue cookies: coffee, hazelnut and peppermint flavors
    Lacinato kale with mushrooms, bacon and apple cider vinegar
    Homemade pasta with fresh tomato&basil

    My in laws came down for an early dinner and that was really special for me. I feel so humbled by them... 55 years married. To make them happy with food is one of my greatest delights. My wife, on the other hand, I spoil every day. Don’t tell her I said this, but she’s easy. ��

    Didn't take any pics, but I cooked what the wife wanted for Mothers Day. So for lunch we had breakfast:
    Biscuits (my first time making homemade biscuits actually)
    Sausage
    Bacon
    Cheese grits
    Strawberries

    I saved some bacon and grease, and then for dinner we heated up some leftover grits and I used the bacon grease to sauté some onions, fresh wild caught shrimp we bought the day before, and some scallops. Put that on top of the grits, chopped up the remaining bacon and sprinkled that over the top, and had some veggies on the side.

    It was a good weekend.

    For a different take on a common theme - a rack of smoked pork ribs and a beer can chicken.

    Not as good or photogenic as a nice plate of beef ribs but still a nice feast..

    Lunch room at the office today is going to smell smokey.
