Pad Thai.
Sauce ingredients. 1/3 cup Tamarind, Fish sauce and Brown sugar, about a tablespoon of the crab paste and Chili Garlic. Notice the lack of ketchup :>)
the Noodles I get them at the Asian Grocery store.
Diced Chicken, sweet dried radish, sprouts, green onion, dried tofu, eggs, peanuts.

Reads like a book Frank. Mrs. Too can't break that addiction. Everytime we go out for Thai, we used to do that, she looks long and hard at the menu than I save her by saying "I'll order Pad Thai ok?"?

Mike my Lao friends who own restaurants laugh when I told them how I make it. It's the same basic sauce recipe they use at home, not at the restaurant. I like the tiny dried shrimp in it as well but Deb has developed an Allergy to shrimp. It's easy to make and if you have an Asian Grocery close the ingredients are readily available and easier to find. I'll try and make Larb this weekend and post some pics on how to make it.

I had some mixed results with the last batch of tempeh. They developed some dark mold which I never mess with, as I don't have a proper fermentation station. I cleaned out my 26 bottle wine cooler and am using that now with a small humidifier and heating pad. It is working out fantastic for the rice wine, so I am excited to do another batch of tempeh in there.

We made Texas sheet cake yesterday. Gave 1/3 to my India neighbors and 1/3 to the kids next door (squeals all around) and vanquished most of the rest. This is by far the best and easiest cake recipe I've ever done. (recipe below). Also, a mish mash of what we had on hand was a roasted yukon gold potato smash and stand mixed with the usual suspects (butter, milk, s/p) than layered with dinosaur kale lightly cooked in water with rice wine vinegar than drained....put into a 400F oven for 35 mins. That was divine.

Texas Sheet Cake
Ingredients
1 cup water
1 cup butter (2 sticks)
3 Tablespoons unsweetened cocoa powder
2 cups all-purpose flour
2 cups granulated sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sour cream
2 large eggs
1 teaspoon vanilla extract
For the Frosting
6 Tablespoons milk
3 Tablespoons unsweetened cocoa powder
1/2 cup butter (1 stick)
3 3/4 cups powdered sugar
Instructions
Preheat oven to 350 degrees F and grease a 18x13'' pan.
Add water butter cocoa powder to a medium saucepan over medium heat. Bring mixture to a boil.
Meanwhile, in a separate bowl mix together the flour, sugar baking soda and salt.
In another small bowl mix together the sour cream, eggs and vanilla.
Add sour cream/egg mixture to the flour mixture and mix until combined.
Once the chocolate mixture in the saucepan in boiling, remove it from heat and pour it into the batter. Mix until combined and no lumps remain.
Pour mixture into prepared pan and smooth with a spatula to make sure it is dispersed in an even layer.
Bake in preheated oven for 15-20 minutes or until set (mine is usually done around 15 minutes).
When the cake is about half-way through cooking, prepare the frosting.
For the Chocolate Sheet Cake Frosting
(You might prefer using a double boiler that will result in a super smooth frosting and allow you more leeway)
Add milk, cocoa and butter to a saucepan. Bring mixture to a boil.
Once boiling, remove it from the heat and stir in powdered sugar. I like to beat the mixture with my hand-held mixer to get rid of any lumps.
Pour hot icing over hot cake. Use a spatula to spread it evenly over the cake. Allow frosting to set for about 10 minutes before eating.

It's that time of year for pickles. Since I've got no place to be and lots of jars I'll drop a line to our organic farmer and see if they can get me a bushel of pickling cucumbers.
