I've been making The Penicilina at home a lot lately. This is a Penicillin cocktail with agave spirits instead of different scotches.
The Penicilina: 2oz. blanco tequila, 0.75oz lemon juice, 0.5oz. homemade ginger honey syrup, 0.5oz mezcal, shaken, double strained and served over rocks with a lemon twist.
Whereas the original penicillin has a blended scotch for a more floral base, with the addition of a peaty scotch for smokiness, this takes a similar approach using a nice floral fruity tequila along with a big smoky mezcal to add those notes.
It's incredible.
