    I've been making The Penicilina at home a lot lately. This is a Penicillin cocktail with agave spirits instead of different scotches.

    The Penicilina: 2oz. blanco tequila, 0.75oz lemon juice, 0.5oz. homemade ginger honey syrup, 0.5oz mezcal, shaken, double strained and served over rocks with a lemon twist.

    Whereas the original penicillin has a blended scotch for a more floral base, with the addition of a peaty scotch for smokiness, this takes a similar approach using a nice floral fruity tequila along with a big smoky mezcal to add those notes.

    It's incredible.

    Just for fun, keep the tequilla pours the same, use .5 oz of agave, and 2 squirts of mole bitters; orange oils as a garnish with a big ol' ice cube in a rocks glass.

    This is right up my alley. I've been making pure agave/lemon/rosemary simple syrup/strained cocktails last couple weeks. Looking back at this thread I've got to try the above Penicillin cocktail. All I need is Mezcal.

    Since we are on a citrus + agave Tequilla kick what else?

    Since getting a bottle of fernet from a local distillery a couple weeks ago, my covid cocktail has sort of become the Toronto:

    2 ounces rye whiskey
    1/2 ounce Fernet Branca
    1/2 ounce simple syrup

    Bitters to taste

    Some excellent recipes here!
    I like a good Negroni or a well crafted Gin and Tonic.
    After our trip to the Basque country of Spain last year we have been enjoying Vermouth.
    Rocks in the glass with a slice of orange and an anchovy olive with a splash of tonic.
    I found a Vermouth from Manzanilla sherry country that is delicious on it's own.

    We have been enjoying a very simple traditional Tequilla cocktail. Made this up and if I looked to hard it would probably mimic what people have been making for a 100 years. I heard it said that g-d greated heaven an earth than man and woman followed by pure agave Tequilla with a generous squeeze of lime shaken in a cocktail glass and strained over an ice cube...or not....heaven.

    Cabo Wabo Blanco is not so bad. Open for suggestions.

    Great summer cocktail, low alcohol content and refreshing....this one has no name as it was the result of a poorly stocked cocktail trolley...

    Equal parts Campari, tonic and fresh grapefruit juice. Serve on the rocks with grapefruit twist

    Made a nice pitcher of boozy sparkling lemonade for sunset socially distanced cocktail hour with our neighbors

    Juice of 4-5 lemons (1 cup)
    2 tbsp of honey....let it dissolve
    2 cups Tito's
    2 cups San Pellegrino
    Couple of lime wedges for color

    Top off with ice and serve

    Good for a couple of rounds for 4 responsible adults

    I have been making regulation margaritas a fair bit ... the textbook 2 oz tequila, 1 oz orange liqueur, 1 oz fresh lime juice; sea salt, lime, serve on the rocks (frozen margaritas are the domain of Chi-chi's, atmo). Only problem is I can see after trying two different kinds of tequila how people can really go down the rabbit hole sifting out the nuances between tequilas. Didn't expect so much complexity in it!

    Perfect for summer, though.

    I dont have a great recipe, but just want to share the observation that lime/lemon juice is perhaps the best "juice" mixer. have been experimenting with lemon/lime juice, alcohol of choice (gin, whisky, rum) and some sort of spritz (perhaps a splash of gingerale or even seltzer/skipping the sugar ). Perhaps not sophisticated, but man, pretty refreshing and delicious. Guess it's a bastardized margherita, but i'll take it. :)

    Really the only cocktail we make at home regularly is a simple gin an tonic. But we did finally splurge on the Empress 1908 gin the last time around and it is delightful both for flavour and appearance (it turns a gorgeous purple when added to tonic): Empress 198 Gin

    We are on the same page. I'm less than happy with the sugar additions.

    I am a bourbon neat and dry gin martini kind of old man. When I go crazy, it's a nice gin and tonic or homemade Margarita. My daughter turned me on to this and I am fascinated by its flavor, especially near the end. Into a shaker with ice, add 2 parts dark green Chartreuse, 1 part gin, 0.33 parts fresh lime juice. Add a pinch of salt and shake/stir well. Strain into a DOF glass and add to the glasses' volume of liquor approximately one half volume of tonic water. Add 5-7 standard ice cubes and enjoy.

    One of the easiest recipes is Sour Whiskey.
    You will need:
    2 ounces (4 tablespoons) bourbon whiskey
    1 ounce (2 tablespoons) fresh lemon juice
    3/4 ounce (1 1/2 tablespoons) pure maple syrup (or simple syrup) *sometimes we add some sugar to a lemon juice.

    Then 2 easy steps:
    1. Add the bourbon whiskey, lemon juice, and syrup to a cocktail shaker. Fill with a handful of ice and shake until very cold.
    2. Strain the drink into a glass. Serve with ice.

    And now you are ready to enjoy your day/evening
