I'm kind of jonesing for a good set of steak knives. We have a butcher block full of great food prep knives, but never got beyond a basic set of henkels steak knives that really kind of suck, haven't decided on what yet, but steak knives are what i want, right now.

and a steak would be good too.

I have a set of Opinel steak knives and they're great. For the money, they are hard to beat IMO.

Opinel would be my choice as well. Our current steak knives are hand me downs from the rents vacation home. Cheap...because they tended to get buried in crab shells and thown out.

Careful when shopping for Opinel, there are some perfect looking knockoffs.

My vote is Victorinox. Plastic handles if you want inexpensive but super functional, or spring for the nicer handles if you want something that looks and feels nicer but cost a lot more. Victorinox Steak Knives ++ explore online ++

I've got the same bugout, The plastic scales don't bother me much although something in Carbon Fiber might be fun. What I like best though is this little knife absolutely disappears in the back pocket. Doesn't matter if I'm wearing jeans or dress pants, it's almost invisible and very comfortable, and SHARP really really sharp.

There are a few companies making carbon scales for them. One thing to keep in mind tho, all the aftermarket scales I've seen have flat handles, whereas the stock plastic handles are contoured just a bit. Mine is still pretty invisible in my pocket, but not quite as much so as with the lighter rounded plastic handles. There is also this ridiculous $750+ 'gold class' version, you could always get that!

My local backpacking shop is having their annual "let's beat REI's Memorial Day Sale to the punch" sale. My resolve is wearing thin and this sale might push it over the edge.

I'm sure something in REI's house brand might be hundreds cheaper and functionally equivalent, but somehow it feels like if I'm going big on a purchase I should just go big, ya know?

Man have I ever ogled those thigns too. I am thinking of all the chilly nights in bags that were either fine new but beat down or el cheapo bags to begin with... and wondering: what would those nights have been like with the one I always wanted?

If/when you want/need something new, check out the Bugout. Longer blade than the MiniGrip (2.9" vs 3.25") with a thinner handle (0.51" vs 0.42") and a touch thinner blade (0.10" vs 0.09"). The Bugout should cut better (thinner stock + a taller flat grind), but the MiniGrip blade can likely take more abuse.

The Bugout is less noticeable in your pocket, but the MiniGrip likely feels better in the hand if you're doing a lot work with it.
