Had a revelation recently. Was at Publix, happened to see their rotisserie set up, noticed instead of putting the birds on the spit with the spine parallel to the spit they rotated them 90 degrees. Why do this? Because you can use the spikes to pin the wings and legs to the body and only need just a bit of twine to tie the ankles together. I suck at tieing up a bird, this is waaaaaaay easier.
Spun this guy yesterday, let it rest at room temp for a bit, then wrapped in foil and into the fridge. Got it out tonight to break down and pick off all the meat to use in some pasta for tonight's dinner and to make some chicken salad. Breaking it down after refrigerating it - didn't lose any juice or fat to the cutting board. WINNING.

Back story we hadn't been married all that long and BDaltons was going out of business (yes we've together for a long time) and I came across this cook book on sale and it looked really good. So I showed it to Deb, and her response was..less than favorable. Of course I did own a lot of Cookboks, (still do) so I bought it anyway :>) and it has become the most used Cookbook we own. It's the cookbook we bought for both the Girls for Christmas one year after they Graduated. Tonight Deb made Fettuccini Al Prosciutto E Asparagi from Giulliano Hazzan's
the Asparagus was from Mom and Dads garden and the pork was from Le Quercia and it was Delicious.

Made some homemade soba noodles this week and decided to pair them with a Japanese curry sauce that was made yesterday, and a pork tonkatsu.
Frank, my folks grew asparagus so I know what it takes. Color me impressed. Great cookbook find. I love the classics, just give me the broad strokes.

I've got some big macaroni shells I'd like to stuff tonight. I've got some good sausage, mushrooms, and spinach. Parmesan and pecorino romano, too.
Lots of recipes call for ricotta. Turns out that the ricotta I'd been "saving" in the back of the fridge was taking its own path to compost.
Most of the homemade ricotta recipes call for a glug of heavy cream. I've got a gallon of whole milk, but no heavy cream. What happens if I just use milk?

Finally got around to the bean soup. 15 bean mix with added kale. Ham hock and trimmings with a slow 8 hour simmer. Garlic and evolved on the last of the bread.
