I'm guessing it's bovine skin in full grain. An occasional, thin application of beeswax-based product like Snoseal is sufficient. If it starts to lose colour, apply a little bit of shoe cream, not shoe polish, of an appropriate colour, but avoid products that contain silicone.
The back of your watch strap might be lined with a different skin, which is where direct exposure to perspiration takes place. Usually, that is a piece of lamb or sheep skin, which is usually chrome tanned.
