    Shrimp Fajitas
    Shrimp sauteed in lime juice, red bell peppers sauteed, simple pan tomato sauce with dried home grown chili, cilantro and lots of garlic, sliced avocado on whole wheat tortillas.

    Nice work Guy. Kudos for making whole wheat work to your advantage.

    FWIIW the date commemorates the Mexican army’s victory in 1862 over France at the Battle of Puebla. (Franco Mexican War). It is not their Independence day rather represents a unified people battling Imperialism...and great booze (kidding about the booze a little).

    We did a DIY Cinco meal at home, made some excellent quesadillas with some left over Big Green Egg smoked pulled pork. Mixed a little Sonny's sweet BBQ sauce in with the pork, used mozzarella cheese (lots), and added some corn, black beans, and cilantro (lots). So good!!
