Short version of a long story:
Proper beef short ribs are basically impossible to find around here. I ordered some from a local hippie grocery store who ordered them from a ranch ~20mins up the road. Grassfed, organic, all that stuff.
What I got was not a 'proper' short rib plate. I instead received a 10.5lbs rack of ribs that measured 21" across the diagonal!! They were frozen when I got them. My neighbor stored them for me for a little over a year, and I finally cooked them this past weekend for the little one's first birthday party.
They were IMPRESSIVE looking, and smelled great. You can't tell just how freakin' big they are in the pics - each bone is about 13" long, that pan is 14" deep and the bones barely fit. Flavor was good, but sadly there wasn't that much meat on them, and was there was tough as leather.
Thankfully I also smoked a big pork butt, and it was stupid good. You just can't mess up pork butts.
They looked great tho!
