I'd like to get my diet a little healthier on a regular basis. I do well when we cook, but thats not often enough, so I'm looking for some healthy, easy meals. Our current meal that we eat atleast once a week is gnocchi, chicken sausage, tomatoes (grape, halved and blistered in a pan) and basil. Another one we have been doing a lot is an avocado, bacon spaghetti.
Do other people have easy, healthy go to's? we'll often go for a ride after work, and be looking to put something quick together before bed. I was listening to the most recent consummate athlete podcast and he sold me on sweet potatoes as a great any meal food for a cyclist, especially since I already like them. So I was looking for some recipes containing them.
