    Default Homemade Frozen stuff

    Round two of the Chef's get together is this weekend I'm making hand cranked ice creme in the fam. 75 yr. old White Mtn. freezer. Yeah buddy.

    My favorite recipe is the classic French Vanilla using egg yolks blah blah blah. There isn't anything better?

    Just for giggles I'll do a test run using this recipe from the White Mtn. Website:
    (Makes 4 qts)
    Maple Walnut
    2 cups Pure Maple Syrup
    2 cups Whole Milk
    4 cups Heavy Cream
    4 Eggs (or Egg Substitutes)
    1 cup Walnuts, chopped
    Directions:
    Mix syrup in a heavy saucepan over moderately high heat until reduced by 25% (5 to 10 minutes).
    Stir in cream and milk and bring to a boil.
    Mix eggs in a large bowl and slowly add the hot cream mixture to saucepan.
    Cook over low heat, stirring constantly until mixture is slightly thickened or temperature reaches 170 degrees F. DO NOT BOIL.
    Chill mixture at least 3 hours.
    Begin to freeze as directed in your White Mountain® Ice Cream Maker manual. Add walnuts in the last 5 to 10 minutes of freezing.

    i have not bought ice cream in 2 years or so. we do use an electric maker though, a Wynter or some such.
    2 favorites stick out: earl grey chocolate chip and chocolate rosemary.
    others we have like a lot are lemon basil sorbet, fresh melon sorbet, sour cream cinnamon, honey and lavender, buttermilk/pepper/lemon thyme, green tea pistachio.
    most teas can make a delightful ice cream. just brew the tea in some cream on low heat.
    i sometimes use eggs, sometimes not. i vary the ratio of cream to milk, but usually 2c milk to 1c cream or 2 to 2. If i use eggs, its 2 eggs per 3-4 cups liquid.
    3/4 cup sweetener
    sometimes vanilla, sometimes almond extract
    nice salt

    it tastes like a million bucks, something about rosemary makes chocolate taste even better.

    You read my mind. Maybe not for ice cream. However, I was at an Amish chili pepper festival a while back and they had soft serve jabanero ice cream. The heat was not apparent at first and you are holding this ice cream cone full of cold ice cream so you take another bite...rinse and repeat. Truly the devils work.
