Man, I don't know where to start. Crawfish/Shrimp Etoufee, Boiled crawfish, Jambalaya, Gumbos of many kinds, Corn Maque Choux, rice dressing, Boudin, Chicken Fricasseé, Chicken Sauce Piquante, Shrimp Eggplant Pirogue. Just to name a few things.
They use simple food, that is perfectly cooked and seasoned just enough to bring out more flavor. The variety of fresh seafood is unparalleled and the vegetables, seasonings and meats are known the world over. It's a wonder I am not 600 pounds.
Cajun cooking seems to offer an endless variety of wonderful food. Should I start on describing Creole food now?
