    Default Dried wild mushrooms

    Well, I bet I have 10 quart jars of dried mushrooms - anything really good to make I haven't thought of?
    Tonight is white pizza with golden chantrelles!

    Like, good cream of mushroom soup, or maybe an oriental soup?

    Whatchu got?

    PS, I have Lobsters, Boletus, Chantrelles, and Caesars.....

    Wild About Mushrooms - one of my very favorite cookbooks. i'll see if i can find you a hard copy, they pop up pretty often at the used bookstores here.

    Mushroom Pate. Bonus, it will freeze nicely if you wrap it tight. I'll pasted an Emril recipe that will work. Leave out the truffle oil and use a heavy non-reactive sauce pan natch.

    Risotto, mushroom gravy over mashed potatoes, beef stew with mushrooms, puree of mushrooms on a pizza with asparagus, garlic, herbs, gorgonzola and fontina. etc..

    For a nice risotto lesson, try this:

    Personally, I'm just as happy with orzo pasta. Cheaper and more consistent, IMO.

    If you need to use a lot of them up, try Hungarian Mushroom soup. The recipes vary quite a bit, but when done well, it's my favorite soup ever.

    Oh, and from my favorite chef, a poached chicken and dried mushroom dish:

    Place I "sommeliered" in when working my way through uni did a chicken mouselline tartlet topped with wild mushrooms in veal demiglace thickened with cream. Insanely good.

    Of course in those days I could eat such things, I steadily lost weight on >10,000 calories a day.

    Gravy.....yes, gravy.

    Risotto is something I have been making, using Lobsters I preserved with this method: Marinated Mushrooms Recipe - Italian Mushrooms Sott'olio | Hunter Angler Gardener Cook

    Which is amazing, you can open a jar and just dig in with a fork, and I use the olive oil like truffle oil - it's delicious.

    Here is last night's - the crust is rubbed with Lobster Oil from the recipe above, and chopped spinach and then topped with a sharp white cheddar and golden chantrelles, and torn smoked ham.......it was pretty damn A-OK, hard to spit out for sure!

    And I forgot all about the jars of hot pickled puffballs......

    Yes!
    They are just like tofu - just like it.
    They have to be 100% firm, no spongy parts, should be a consistent white inside with no yellowing.
    Impossible to mis-identify.
    I posted a pic back in the summer of me with one 2x the size of my head.
