Double four-in-hand works well for this, but be aware it'll always get a little sprezzatura. Basically just do two lateral loops before you pull the blade through. Little extra heft without the silly geometric giant block of a full windsor.
Depends on the size of the collar. I think a four in hand could look okay with a spread collar, but I prefer a single Windsor for just a little more bulk in the knot.
The double Windsor has been appropriated by the doucheoisie.

I don't own any ridiculously spread collars, so I'm hoping the double 4IH will do the trick. If not we'll go the single windsor.
You're pretty tall, aren't you? I like the 4inH because I can get a little extra length.
As a sidenote, I just bought my first bowtie (Billy Reid). Learning new knots is fun.
