    Default 4th of July cooking Contest, post pics here!

    Our pal Shino has offered to judge a virtual cooking contest. Post pics of your 4th of July barbeque food pics and you could be eligible to win a classy or cheesy prize (yet to be determined). Good beer in the pics will be worth bonus points. So get those grills going and the camera's out.

    I'll be posting pics of the pork shoulder that will be coming off the smoker in about 9 hours.

    Too late for me!
    I had the smoker fired up earlier this week, did some ribs and a shoulder.
    There's no pics, and all the evidence has since been eaten.

    I ate my entry. My gf made me crepes this morning. I stuffed one with sweet coppa, spinach, and gorgonzola... Oh man..Jonathan. what is inside that entry?

    That was a 15lb pork shoulder, smoked for 10 hours with hickory, mopped with a south carolina style mop suace. It was so perfectly done I could pull the bone out without any meat coming with it. Sweet.

    Default What's on the grill?

    Hey, I semi-redeemed myself last night. We were invited to a neighborhood hoo ha. Folks were supposed to bring "something" to put on the gril HELLLLOOO NURSE!

    Dish 1

    Salmon Chunks - Skin out 2 lbs of King Salmon and cut into 1 1/2 x 1 1/2" chunks. Marinade in spanish olive oil, lots of cracked pepper, finely diced rosemary warmed in some butter, healthy amt. of lemon zest. Just before grilling skewer a few pieces. Pre-treat the grill with olive oil and don't flip the fish...use a spatula and tongs when done.

    Dish 2

    Grilled Peaches - Use peaches you'd eat over the sink :) Prep. marinade as follows...warm honey and add top notch saffron and let cool...when still warm add lots of torn mint and combine with peaches in a baggie with air removed. Grill direct over hot part of the grill until carmelized and serve room temp cut in 1/4's.

    The peaches were a big hit :)
