    Creative minds of V share here.
    Yesterday, we had some good friends coming over for dinner. I was BBQ'ing chicken and a CousCous to go with but that's pretty boring so I whipped up some eggplant caviar. This is a riff on something I've been making for a few years as spread for sandwhiches.

    Eggplant Caviar

    In a cast iron pan stack over med. low heat:

    1. rough chopped tomato. Perfect use for tired goods.
    2. rough chopped onion and garlic
    3. pat of butter on top, splash of EVO, salt, pepper
    4. leave this alone for two hrs. or until it has caramelized. Avoid any dark caramelizing by reducing heat.

    In the oven at 350F:

    1. 1/2" slices of Japanese eggplant with generous splash of evo no seasoning.
    2. Cook until translucent than burn them under the broiler...be reasonable yo not charred just a little scorched.
    3. When done chop the eggplant into small pieces

    Combine

    1. Combine everything and in the best world let them marry for a day. Let me know how that works out I've never waited that long.

    This is fantastic as a spread for sandwiches or mixed into cooked grains and a million other things I have not thought of.

    That's pretty much what I ended up with on the "What do I do with all these japanese eggplants" thread - just excellent. One thing I did was to char the shit out of the eggplants on the gas grill just like green chilis and peel the blackened skin off, they were cooked beautifully, <10min.

    Here is one people won't spit out: Smoked Salmon (Or trout if I have them - often) I smoke them myself.
    finely diced celery
    finely diced purple onion
    dash mayo/dash sour cream
    salt + pepper
    blend well.
    Pot-lickin' good.

    Garro you bring out my competitive streak ;) I'd eat a brick if you put that on it.

    This is one I never thought I'd share outloud. Grandma put booze in everything and with out whiskey this is disgusting, with it is indescribable and tastes like the old school recipe it is. Goes well on celery or crackers, it's weird but you have to try before you judge.

    Granny's Whiskey Mayo Spread
    Use your hands to very very very finely shred high quality tuna fish. There can not be even one single identifiable piece of tuna, shred until it is dust.
    Now mix with homemade mayo, pepper and whiskey.
    Deny the recipe to all but the worthy.

    Garro reminds me to go fishing next summer, catch a couple of bluefish.

    then ya take em home, smoke em, and make smoked bluefish pate.

    We're having a not-dinner Xmas party in a few weeks. That eggplant one might sneak into the rotation.

    Sounds good (or reads well). Sorta like caponata, but a little different. This makes me think I should consider adding an eggplant option to the annual but-we-call-it-Chanukah-fest thing I do, which has gotten a little crazy over the years (I think I fed latkes and brisket to 92 peeps or thereabouts last year).
