Do you have a recipe? I have heard what is in them, but not seen a recipe.
I think the video is on the team website. I've never tried to eat them on the bike, but I'll make a rice/egg/liquid amino thing for breakfast before long rides.
Those look delicious. Like fried rice, except not fried. I especially like the idea of working bacon into an in-ride meal.
This will have to be tried.
Fights begin, finger prints are took, days is lost, bail is made, court dates are ignored, cycle is repeated.
I typed out a recipe from the video:
Francois (Rice/Egg Cakes)
Proportions are 3 eggs:1 cup sushi rice
1. Scramble eggs using good olive oil. Season to taste. (salt, soy, amino)
2. In a baking pan or bread pan mix egg, rice, grated parm. cheese and add "extras" such as diced canadian bacon, ham or fruit.
3. Press mixture with a spatula and compact it. Let cool until firm.
4. Cut into 3"X3" squares and wrap in tin foil.

tried this today
(to eat as lunches at school...shoving 2000 calories in my mouth between 8 to 3...oh yea)
1 cup short grain brown rice
3 eggs
1/4 cup fresh ground mozzarella
1 cup chopped spinach
1/3 cup tomato sauce
1/4 cup chopped basil
turned out too moist -- they hold together, but barely. too much liquid with the tomato sauce. I need to use drained chopped romas or something...they taste all right, though....
I'll try another batch this week to get the texture right...they're a handy thing to bring as lunches...I can only eat so many PBJs and clif bars.....

I've done it. It's just about impossible to make the brown rice stick together. using sushi rice - no problem. it's the same stuff holding up sections of the Great Wall of China.
Brown Calrose sticks for me. The trick is also how you cool them- in saran wrap or tin foil to keep their shape.
Have you guys tried to eat these on the bike? If so, how easy is it and how did you wrap them? ...it seems like the glue-like sushi rice would get stuck all over the place.
I would think that, as long as they are cool before you wrap them, they should come out of the foil in one piece. His recipe is pretty boring atmo. I would try something a bit more interesting like actually rolling the rice around the filling or something. Some ham and jam (old school) with a layer of rice around it instead of bread would be good.

There are so many possibilities for these... It's great to take a good idea and make it better.
I've used homemade waffles to wrap the contents before and they hold up well, too. The key is to undercook them slightly so that they aren't totally crisped when you fill them, then wrap and throw em in the fridge. Another thing I love are these things my girlfriend calls "journey cakes". basically a multi-grain pancake w/ protein powder, granola and some dried fruit thrown in.
If you use peanut butter/almond butter/nutella they can be hard to eat unless you throw some banana slices in before rolling, too... the 'nana helps elimate the issues that peanut butter leads to on the bike. of course you can just use jam, too. anyway... I, like many of the folks on this site, love to eat well and cook. Seems a common pastime among cyclists. I can't remember the last time anyone--outside of a restaurant chef--has cooked for me.

In Costa Rica they eat something called Gallo Pinto for breakfast. Just a basic mix of left over rice and black beans, scrambled with eggs. I make it at home for all meals. Works especially well with short grain brown rice. Like the Lim cakes, you can mold it and let it cool. I carry it camping. Yum.

Would it be ok to use saute'd Tofu instead of egg? I am not really an egg fan.
