So after more tinkering I enjoy your roasts more through the aeropress. I was happy to try a darker roast than I'm used to. It's been a long time since I purchased a darker roast. I roasted a Colombia Finca El Mango tonight to a 25% development ratio, and it still would be consider a medium.
Sadly I cooked an Ethiopia waaay to fast. Dropped hot and the turnaround was almost immediate. By the time I realized what was happening, I was just along for the ride.... :/.
Experiments ever ongoing!!

My process is based on the above, easier to let someone smarter say it. Over the last several years my preferences have migrated to the nuanced medium light roast profiles. My current go to fav is a nice juicy Ethiopian. So I try to emulate those.

Further I've tried to stay at 20% trying to improve my process by eliminating variables.
That said I send TT a 22 and 25 Nicaragua, hopefully they're palatable enough to have a preference and speak to it.

25% has been worked to the bone Shoogs....I'm wired. Did a few espresso shots but was not happy so I switched to french press and Voila magic! All the nuances came out and I'm appreciating how interesting flavors can be found when beans are not roasted too dark. Also, this business of trying each others roasts is going to push me to figure out how to get alot more flavors out of my favorite beans.
