Default things to do in Denver

My girlfriend and I will be in Denver for a week, from late July to early August.

We're into hiking, parks, coffee, museums, and other unique things we haven't seen before. Not so big into bars or breweries. We might rent some bikes, but nothing fancier than hybrids for puttering around town. I'm not packing my Sidis.

What are some cool things to see/do off the beaten path?

Assuming access to a car, but I enjoyed hiking Eldorado Canyon with my wife. We are casual hikers (good fitness, but don't do it often) so I don't think this would be classified as super tough, but definitely multiple hours and we never ran out of trail. We were staying in Boulder which also has a lot of good restaurants which I can give you if you think you will make it out that way.

Can you go to my brothers house and put air in the tires, adjust the brakes and gears, and lube the chain on my Cannondale flat bar road bike that I will use in late September when I visit?

If you can drive a bit, one of my favorite hikes is Crested Butte to Aspen. In Late July the Wildflower Festival is going. The color of the columbine changes every half mile as you ascend. Ice cream from Third Bowl in Crested Butte, and whatever you want in Aspen. It's stunning. Here's a photo I took from the pass: Flickr

Rosenbergs deli in 5 Points is really good. Bagels. Lox.
    Huckleberry Roasters for coffee.
Skip Casa Bonita - worse then terrible.
Red Rocks. Hike it. Run it. There's a group workout most weekend mornings. Brutally hard.
    Rockies game at Coors field.
Be sure to study the murals at DIA.

If you are veg/vegan Watercourse foods is AMAZING.
Great greek food at Pete's Central One.

If you have a car I would drive to Rocky Mountain National Park and do a short hike, grab some mexican food for dinner in town. RMNP can be busy so go early or late (3:00?) to avoid crowds.

Boulder is cool, you can hike in the flatirons, go people watching on the Pearl St. Mall, stop in Vecchios for bike porn.

Have fun, Denver is a blast.
